Abstract
Probiotics are dietary supplements that are by definition “living microorganisms, which upon ingestion in sufficient numbers, exert health benefits.†Health effects that are ascribed to the intake of probiotics include beneficial effects on disease resistance, gastrointestinal diseases, and allergies. The widely used probiotic are lactic acid bacteria, mainly Lactobacillus and Bifidobacterium strains most often isolated from the human gastrointestinal tract. However, other “less conventional†bacteria, from allochthonous origin, sharing similar structural or functional features, may also confer specific health benefits to a host. The aim of this study was to assess the probiotic potential of lactic acid bacteria from palm wine of two regions of Cameroon. Twenty Gram positive and catalase negative bacteria were isolated from palm wine collected in West and South west regions of Cameroon using MRS agar. They were identified as lactic acid bacteria belonging to four main genera: Lactobacillus, Leuconostoc, Lactococcus and Pediococcus using the miniaturized plate technique and API 50 CHL (Biomerieux) kit. The probiotic potential of the identified isolates were assessed, especially the antimicrobial activities toward important foodborne pathogens as Escherichia coli, Salmonella typhimurium, Staphylococcus aureus, Campylobacter jejeuni, Listeria monocytogenes were achieved by diffusion method. On the other hand the immunomodulatory activities of the isolates were assessed, and in the last phase the oral tolerance, the safety and anti-inflammatory potential were respectively studied in normal and in 2,4,6-trinitrobenzene sulfonic acid (TNBS)-induced colitis mice model.
